It feels like a long time ago and at the same time, like it was yesterday. A long time because when I see photos of when she was a baby I am taken by surprise because I don\u2019t have a vivid memory of those moments and that makes me sad because it was relatively recent. Yet, in some ways, Manuela is still a baby, and I still feel like a first time mother. Everything with her is new.<\/p>\n<p>Manuela is growing and now she is much more aware of everything happening around her, and that is why she gets excited about getting ahead of ourselves and preparing such a beautiful and special day together: her <strong>birthday<\/strong>. I want her to have fun getting involved in the party preparations and making her first <strong>cake<\/strong> to share with her classmates. My daughter\u2019s two wishes for the <strong>desserts<\/strong> on her fourth birthday were very clear: she wanted to make a <strong>sponge<\/strong> <strong>with <em>lacasitos<\/em> (smarties)<\/strong> and, although it seems incredible for such a young girl, she also wanted her grandad\u2019s <strong>tiramisu<\/strong>.<\/p>\n<p>So the day before her birthday we put our minds to the task and began to buy the <a href=\"http:\/\/www.vanesalorenzo.com\/en\/2017\/12\/resolution-2018-organic-food\/\" target=\"_blank\" rel=\"noopener\"><span style=\"text-decoration: underline;\">organic ingredients<\/span><\/a> to make our <strong>homemade<\/strong> <strong>sponge<\/strong>. We had an absolute ball being busy in the kitchen and mixing the ingredients with our hands. Little Maria, who was more than delighted to help, or should I say, to make trouble, also joined in.<\/p>\n<p>I am sharing the classic and simple <strong>recipe<\/strong> that we call \u201c<strong>Manuela\u2019s sponge<\/strong>\u201d at home.<\/p>\n<hr \/>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-large wp-image-8123\" src=\"http:\/\/vanesalorenzo.com\/wp-content\/uploads\/2024\/07\/2-vanesa_lorenzo_blog_bienestar_receta_bizcocho-1024x683-1.jpg\" alt=\"El bizcocho de Manuela | Vanesa Lorenzo\" width=\"1024\" height=\"683\" \/><\/p>\n<p>I N G R E D I E N T S<br \/>\n<em><span style=\"color: #808080;\">For a medium-sized sponge cake. The \u201cglass\u201d measure corresponds to a yoghurt pot. All the ingredients are organic.<\/span><br \/>\n<\/em><\/p>\n<p style=\"padding-left: 30px;\">&#8211; 2 glasses of natural yoghurt<br \/>\n&#8211; 3 glasses of baking flour<br \/>\n&#8211; 2 glasses of <a href=\"http:\/\/www.vanesalorenzo.com\/en\/2017\/04\/sugar-food-nutrition\/\" target=\"_blank\" rel=\"noopener\"><span style=\"text-decoration: underline;\">Xylitol &amp; Stevia<\/span><\/a> (you can use another type of sweetener if you prefer)<br \/>\n&#8211; 3 eggs<br \/>\n&#8211; \u00bd glass of <a href=\"http:\/\/www.vanesalorenzo.com\/en\/2017\/06\/nutrition-fats\/\" target=\"_blank\" rel=\"noopener\"><span style=\"text-decoration: underline;\">extra virgin olive oil<\/span><\/a><br \/>\n&#8211; 1 packet of baking powder<\/p>\n<p style=\"padding-left: 30px;\">For the topping (optional)<br \/>\n&#8211; Chocolate spread<br \/>\n&#8211; Smarties<\/p>\n<p>P R E P A R A T I O N<br \/>\n<span style=\"color: #808080;\"><em>50min. approximately<\/em><\/span><\/p>\n<p style=\"padding-left: 30px;\">1 | Preheat the oven to 180\u00baC, with heat coming from above and below.<br \/>\n2 |\u00a0Mix the eggs with the sugar. The baker in my house, my father, <em>abuelo Manuel<\/em>, has a trick to make sure this cake turns out spongey. He says to beat these two ingredients really well until the mixture has doubled in size and has created a whitish foam. If you draw an 8 with a whisk and it stays marked, this step is complete.<br \/>\n3 |\u00a0Continue adding the oil and the yogurt, beating the mixture well.<br \/>\n4 |\u00a0Sieve and add the flour gradually, making sure it mixes in well.<br \/>\n5 |\u00a0Lastly, add the baking powder and mix again.<br \/>\n6 |\u00a0While you leave the mixture to rest, cover the base of the baking tin with baking paper. Make sure the corners are well covered so the sponge doesn\u2019t stick.<br \/>\n7 |\u00a0Pour the mixture into the baking tin and bake for 40 minutes.
